Just adding to Nomad's reply.
If your CV and cover leter can stress somehow the linguitsics, phonology and ESOL-related things you habve done then that will help them not get lost among all the other info.

Any teaching experience is good, but if it is in a different area/language then yes, stressing the experience over what was actually taught will be good.
